Music and Dinner
Chillin’ at Chipeta debuted in December 2015, and offers a night of live music and dinner once a month throughout the winter. The series was designed as a way to bring talented local artists and a talented local chef together for a fun, artistic evening. Ridgway is a melting pot of all types of artists, so we are able to host talented musicians each month.
Honga Im began catering the Chillin’ at Chipeta concert series in December 2015, and then opened The Lotus Root at Chipeta Solar Springs Resort in June of 2016, offering unique dishes and flavors inspired by her travels throughout Asia. Sourcing from local farms and ranches, Chef Honga creates simple yet refined dishes that pay homage to her roots, such as the Gado Gado Bowl with Striped Colorado Bass and fresh local vegetables, and delicious sushi rolls and appetizers like Beandedok, a Korean mungbean savory pancake.
Honga always presents a fantastic buffet for the Chillin at Chipeta event, offering an assortment of curries, fried rices, salads, appetizers and of course her amazing sushi rolls.
