Chipeta’s Four Corners Cafe Elevates the Summer Culinary Scene

With a focus on blissful relaxation and year-round recreation, Chipeta Solar Springs Resort & Spa offers Ridgway, Colorado visitors and residents yet another reason to toast the return of summer.

The refreshed Four Corners Cafe is once again welcoming fans of food and libations to sip and sup on delicious Southwestern-inspired fare in our boutique lodge with the majestic San Juan Mountain Range painting a beautiful backdrop.

Open for dinner Wednesday through Monday, Four Corners is the perfect place to fine dine on Chef Chuy Avalar’s new, eclectic menu of Southwest fare with coastal influences of seafood and sushi.

Aside from the chef’s creative nosh and spirits from the region, patrons can enjoy casual tapas, happy hour from 5-6pm and vibrant music scene at the rooftop deck’s SKYBAR with its incredible view. This spot is so popular and perfectly perched that the local community voted it as “Best View in the Valley” for its vista of the Uncompagre River and Cimarron Mountain alpine glow.

Chipeta is also excited to welcome the return of musician David Nunn every Wednesday, as well as our Singer Songwriter summer concert series on Fridays from 6-9pm. Nunn is best known for his blend of blues, rock, jazz and American jams.

Four Corners’ diners say they appreciate how Chef Chuy works his culinary magic from beginning to end. Tantalizing appetizers include Asian BBQ Pork Ribs with Cucumber and Apple Kimchi, Fried Calamari with Lettuce and Sweet Spicy Sauce, Grilled Fish Tacos with Pico de Gallo and Tempura Asparagus with Spicy Ponzu and Sweet Chili Sauce.

Salads selections range from Fresh Watermelon with Feta Cheese to Classic Caesar and Mixed Greens. Those craving protein can add chicken, steak or salmon to the latter pair.

Also showcasing the chef’s unique flair are such impressive entrees as Grilled Wild Salmon with Baked Sweet Mashed Potatoes, Chicken Breast with Spinach Risotto, 6 oz. Beef Filet with Green Peppercorn Sauce, Grilled Pork Chop with Mushroom Cream Sauce, Seafood Pasta with Dill Cream Sauce and Southwest Shrimp Skewers.

What truly elevates Four Corners’ menu is its immersion of ocean delicacies. Fish and seafood lovers can relish raw oysters, seafood cocktails and ceviches. Those craving sushi are appeased with a variety of roll options that include spicy tuna, spicy salmon and tempura shrimp. Tuna and salmon sashimi add to the sumptuous mix.

Local spirits include wines from Western Colorado’s Grande River Vineyards and craft beer selections from nearby Durango’s SKA Brewing.
